Achaari Murg is a North Indian Style Delicacy. North Indian has a culture
of making various types of Achaars - pickles. The pickles are made once in a
year - mostly in the winters and are then stored for the entire year for
consumption. The ingredients in the Indian Pickles work as preservatives so
that they do not get soiled.
Though the way Mughlai dishes have changed dramatically, still the taste
remains the same. A lot of pain is taken to prepare the delicacy, which
takes hours to prepare the dishes. Not all the dishes take a long time to
prepare - Mughlai Chicken is one such dish- one such food among
Indian Foods.
Achaari Murg
Ingredients :
1 kg Chicken
1 tsp mustard oil/sarson ka tel
1/2 tsp fennel seeds/saunf
3- 4 Long Red Cillies/sabut lal mirch
1/2 cup onions sliced
1tsp Garlic Paste
Juice of 1 lemon
1/2 cup tomato puree
1/2 tsp Turmeric power
2 tsp garlic paste
Salt to taste
2 tsp finely chopped coriander leaves
1tsp nigella seeds/kalongi
To be ground :
Though the paste of garlic and ginger are easily avialable in the market,
still you can make their paste at home.
Preparation Method
Wash out the chicken in flowing water and then cut it into small sizes
as per desire. On the other hand, take a deep frying pan and heat the
cooking oil in it. Once the oil is heated add the nigella seeds into it.
When the nigella seeds splutter, add the chicken pieces to it. Fry them
for a few minutes. When the chicken pieces turn, brownish red, add the
garlic paste, fennel seeds, turmeric, coriander and red chilli powder.
Fry the paste till it leaves the oil. Add salt to taste. Let the paste
fry at low heat for 10 - 15 minutes. Put out the dish when the light
aroma of the cooked Achaari Murg begans to come out.
Serve hot with Chapatis (Indian Bread) or Naan and Youghurt.
