Dahi Gosht
Dahi Gosht
Dahi Gosht is a Awadhi Dish. There is a Special way of preparing food in
the Awadi Style; this method of preparation is called Dum Pukht process of
cooking. Dum Phukt process involves sealing the ingredients in a large pot
called handi. The handi is placed over a slow fire, allowing the food to be
cooked in a slow manner. Today this process is used a lot in Lucknow.
Its very true India is all about Vegetarian Foods but with the Multi
Culture it imbibes, non vegetarian food becomes a part of the Indian
Culture. It is in this list that the Dahi Gosht comes. Gost the Urdu meaning
of Lamb is one of the favorite and most sought after food of Lucknowi
Nawabs. It is one of the foods which is not only savored in North India but
also other states in the Country.
While Strict Hindus differ in their opinions, the non - vegetarian look
upon this food as the main Chef Delicacy. Preferred and liked by the taste
buds on all occasions it has a special yet simple method of preparation.
Dahi Gosht
Ingredients :
500 gms boneless Goat Meat
500 gms youghart
4-5 Green Chillies
1/2th tsp. Garam Masala
3 tsp Coriander finely chopped coriander leaves
1 tsp turmeric
4 bay leaves
500 gm diced red tomatoes
3tsp chopped mint leaves
2tbs garlic paste
3 big chopped onions
3 tsps cooking oil
1 tsp cumin seeds
Salt as per taste
Handful of finely chopped Coriander leaves for garnishing
To be ground :
2-3 onions, 1/2 kg tomatoes, Green Chillies
Preparation Method
First of all marinate the Goat meat for 30 minutes. Take a large bowl.
Pour the yoghurt into it. Add turmeric powder, ginger and garlic paste.
to it. Then heat the cooking oil in a frying pan. Put asafoetida and the
chopped onions to it. Fry till the onions turn golden brown. Add the bay
leaves, coriander powder, mint leaves and tomato paste to it. Fry it
till it turns light brown. Add the marinated meat and cook it till the
water in the pan dries out. Add the Dahi / Yoghurt to the mixture.
Garnish with chopped coriander leaves.
Serve Hot. Serves six people at a time.
