Gajar Ka Halwa

In India Gajar Ka Halwa is often associated with Mother s love. Made with lots of pain and warmth, it is one of the sweets which is prepared in almost all occasions. Loaded with Raisins and lots of Ghee and Milk, it is also one of the most nutritious sweets.

Though Gajar Ka Halwa is a North Indian dish, but still it can be found in South Indian Homes too. However, it is generally not prepared in North Eastern States.


Gajar Ka Halwa

Ingredients :
  • 1 kg of Gajar/Carrots
  • 1 & 1/2 kg full Cream Milk
  • 1/2 kg Sugar
  • 2 tsp Ghee
  • 1/2 cup dry fruits - almonds and cashew nuts
  • Cardamom Powder

    Preparation Method

    Grate the entire Gajar/ Carrot and put it in a bowl. Then take a deep Frying pan of 3 liters/ Kadai and pour the ghee into it. Now add the Carrots into the ghee and stir the Carrots till they become slightly red in color. Once the carrots turn red add the milk to the carrots. Stir the mix constantly and keep the gas at its lowest so that the milk dosen't come out. After 10 minutes add the sugar and the dry fruits to the mix. Keep on stirring constantly till the milk gets dried up.

    It takes about 30 - 45 minutes for the Gajar ka halwa to get prepared. Don't make haste and don't increase the flame, otherwise the halwa will loose it flavour. Once the entire milk gets dried up, serve hot. It also tastes good when not hot.
