You name it and you have it. There isin't a place in North India which
dosen't prepare this delicacy. The Fondness of Kheer is such that you will
find it in North Indian Homes without a reason. Kheer is prepared on all the
festivals.
Indian Delicacies have a special way of preparation - low heat and high
sweet is the concept. Usually they take very less time to get prepared and
can be stored for longer periods than other Indian Foods.
Kheer
Ingredients :
- 1 litre milk
- 25 gms Sugar
- 1 tsmall cup Long Basmati Rice
- 12-3 cardamom - crushed
- One pinch of Saffron
- 4-5 chopped Badam/Almonds
To be ground :

Preparation Method
Soak the rice in drinking water for 20 minutes. Now boil the milk. Once
the milk is boiled add the drained rice and sugar to it. Put the flame
on its lowest and then keep stirring the solids till the milk reduces to
half of its actual size. Stir the milk slowly so that the rice flake s
do not get broken. Then add the almonds and saffron to the milk. Stir
for 10 more minutes and your Kheer is ready.
Cool the Kheer at room temperature and then put it in refrigerator for
half an hour. Serve chilled.

- Kheer can be stored in the refrigerator for a
maximum of 3-4 days.
- It is mostly prepared in North Indian States
like Delhi,
Agra and
Lucknow.
