Rogan Josh is a delicacy from Kashmir. The literal meaning of Rogan Josh is
Red Meat. Its especially prepared in the festive season of Id. This low fat
dish is all time favorite of Kashmiris. Due to shifting of Kashmiris from
Kashmir to other Indian States, it has caught up with the taste buds of
North Indians too.
Rogan Josh
Ingredients :
- 1 kg cubed lamb
- 1/2 cup youghurt
- 2 tsp garlic paste
- 8-10 cloves
- 2 piece cinnamon
- 1/4th cinnamon
- 2 tsp cumin seeds
- 3-4 dried red chillies
- 1/2 kg tomatoes
- 2 medium sized chopped onions
- 1 tsp meat masala
- 1 cup water
- salt to taste
- finely chopped coriander leaves for garnishing
To be ground :
Chop the tomatoes into four pieces and then grind it in the grinder.
Preparation Method
Take the lamb pieces and mix them with the youghurt. Keep this mix at
one side. Now heat the cooking oil in a deep fry pan. When the oil is
heated add all the ingredients - cardamom, cinnamon, red chillies and
the garlic paste. When they start to splutter, add the sliced onions. As
soon as the onions turn golden brown, add the turmeric and salt to it.
Then pour the lamb pieces in the masala. As the meat changes its color
and turns to brown, add the meat masala. Now stir the masala for 5
minutes (with 1 cup water added to it for gravy) till the aroma begins
to come out.
Garnish with Coriander leaves and serve hot with Chapatis/Naan/Rice.
