Uttapam, Uttapa, Utthapa,
Uththaappam - One dish and so many names. Uttapam is a preparation that
comes from South India. Every home in South India is well acquainted with
this dish. Mostly made for the breakfast or as evening snack, Uttapam is a
fulfilling food filled with a lot of nutritional value.
Uttapam, unike other South Indian Dishes which come in variations of filled
dishes, is thick, not filled and round in shape. Its preparation, once the
batter is made, does not takes more than 5 minutes.
Uttapam
Ingredients :
- 100gms Urad Dal
- 25 gms Chana Dal
- 1 tsp cumin seeds
- 100gms Butter or Ghee
- 1 large finely chopped onion
- 2 - 3 large tomatoes, balnched and finely chopped
- Salt to taste
To be ground :
Wash the Urad Dal and Chana Dal in running water and then soak them in
drinking water overnight. In the morning grind them in a electric grinder to
make a semi - solid paste/batter. Keep this paste for one more day in a
fully covered metal vessel for the yeast to form. Once the yeast is formed,
it is used to make uttapams.
Preparation Method
Take the batter. add salt to it. Then add the sliced onions and chillies to
it. Then take a non - stick tawa/pan and put it on a burner and heat it at
medium heat. Once so heated put 1 tsp of oil on the tawa. Now take one cup
of batter , and spread it on the tawa. Pour 1 tsp oil on all the sides of
the batter. Then flip the side of the Uttapam and pour slight oil on it.
When it is slightly reddish in color, put it on the platter. Serve it hot
with Sambar and Chutney.

- Uttapams are usually served as Breakfast. But uttapams are rarely
served alone. They are usually accompanied with Sambar and Nariyal Ki
Chutney (Coconut Sauce).
- Uttapams can be stored for a couple of hours, 6 - 7 hrs in a day. Its
good to store them in a closed vessel which is NOT air tight. Re - heat
them before serving if stored.
- In the Summer season (March - June), it takes less to time for the
batter to yield yeast; in winter it has to be kept overnight to ferment.
In any case, it better to prepare Uttapams in the winters.
- Powder of Uttapams is easily available in the Indian Markets. This
Paste when mixed in water makes the batter for Uttapams. One pack of
500gms is good enough for 8 people.
- Variants of Uttapams can be tried out. Onion Uttapams and tomato
Uttapams are the most famous ones.
- All the Indian Restaurants especially the South Indian Restaurants
serve Uttapams. Kerala
and Bangalore
are famous for Uttapams.
